I didn't make this recipe. I am trying new things so I will be publishing in this area the recipes I tried. I hope you like them too!
In any case they come from the cooking book called "One Pot".
Serves: 8 Preparation time: 15 minutes Cooking Time; 40 minutes 1 large kumara (500 g), sliced thickly 4 medium potatoes (800 g), sliced thickly 1 large brown onion (200g), sliced thickly 2 table spoons olive oil 1 table spoon lemon juice 3 cloves garlic, crushed 1.6 kg veal rack (8 chops) trimmed 2 cups (140 g) stale bread crumbs 1 tablespoon finely grated lemon rind 1 fresh long red chilli, sliced thinly 1 fresh long red chilli, chopped finely 60g butter, melted
- Preheat oven to 220-200ºC fan forced.
- Combine the kumara, potato, onion, oil, juice and twi thirds of the garlic in a large ovenproof dish.
- Place veal on wire crack over potato mixture in dish.
- Combine remaining garlic, breadcrumbs, rind, chillies and butter in a small bowl.
- Press breadcrumb mixture over veal.
- Roast, uncovered, about 40 minutes or until cooked as desired.
- Stand covered 10 minutes before serving.
NOTE: I am new at oven and stuff, so maybe you already know this... if it is taking suspiciously long to cook down there in the middle, is time to turn the meat upside down.
